Timothy Rooney is a familiar face on the San Antonio River Walk. He’s the founder of Waxy O’Connor’s Irish Pub. Many are unaware, however, of how multi-faceted he truly is.

Timothy immigrated to America from Ireland over 20 years ago. He worked in construction and plumbing before having an epiphany regarding his true calling. “I was having a drink at the bar one day and I was watching the bartender,” explains Timothy. “And I thought... I can do this.”  

Fast-forward fifteen years and he is operating one of the River Walk’s most iconic bars. So where did he go from there? Pizza, of course. Just this week, Alfredo’s Pizza officially opened. Timothy wanted to provide a convenient place for downtowners and locals to pick up fresh food and desserts quickly and easily.

He sells pizza by the slice made from fresh ingredients, caprese salads, gelato, ice cream, cannoli and more. For the uninitiated, gelato is an Italian dessert like ice cream, but with less fat and simpler ingredients. Timothy is partial to the mint chocolate chip but says he has been leaning toward the classic vanilla recently. His fiancé Jennifer is a trained chef and has contributed to the offerings you find in the shop. 

Those construction skills he honed over many years came in handy when it came time to add elements to Alfredo’s. Timothy hand carved and worked the counters using wood sourced from the Texas Hill Country. His personal touch can be felt in all aspects of the shop.

His commitment to downtowners goes beyond just offering fresh, convenient fare. Downtown employees get a 20% discount. He also offers a 10% discount to all military personnel. (If you’re a regular at Waxy’s you know there’s a discount for downtown employees there as well.)

The Centro Main Street Team was lucky enough not only to connect with Timothy and Alfredo’s, but partner with them (among other businesses) to host a public hand sanitizing stand. Timothy is committed to providing a safe experience for guests. He encourages everyone to support small businesses during this time because when you patronize a local business, you are supporting the livelihood of your neighbors.
